Ajvar.

Ajvar, ingredients:

  • 12 kg of paprika
  • 3 kg of blue eggplant
  • 2 kg of carrots
  • 1,5 l of oil
  • 250 g of sugar
  • 200 ml of vinegar
  • 4 tablespoons of salt

Ajvar, preparation:

  • Roast the pepper and blue eggplant, peel and grind.
  • Boil and grind carrots.
  • Mix everything and add oil, sugar, vinegar and salt.
  • Cook in a deep pan at a moderate temperature, stirring occasionally, until the boiling water starts to leave a mark on the bottom of the pan.
  • Put the clean and dry jars in the oven, turn it on at 100 degrees and after half an hour take out the jars and pour hot ajvar into the hot jars. Close, wrap them in a towel and leave them to cool.
