Ajvar made from chopped peppers - many say that ajvar made from chopped peppers is tastier than ajvar with ground peppers.
- 3 kg paprika (fleshy red for ajvar)
- 2 kg paprika (thin for pickling)
- 300 ml of oil
- 2 tablespoons cocoa powder (without sugar)
- 2 tablespoons of vinegar
- so
- Roast the peppers, peel them, remove the seeds and chop them lengthwise.
- While peeling and chopping them, put them in a colander to drain.
- Otherwise, there is no pressing all night long, but we fry them in our own software.
- Heat the oil and pour the paprika.
- Add sugar, vinegar and salt to taste.
- Fry the ajvar with continuous stirring for 30 minutes.
- Pour hot ajvar into hot jars.
- Coat with essence (wet a teaspoon with essence and pass over a full jar of ajvar.)
- Close the hot jars and wrap them in a blanket.
- Leave until the next day to cool.
