American pancakes (also called "Canadian", and sometimes called hotcakes, griddlecakes, or flapjacks) are usually served for breakfast, as two or three pancakes arranged on a plate, topped with natural or artificial maple syrup and butter, and often served with toppings, such as bacon, toast, eggs or sausages.

Other popular toppings include jam, peanut butter, nuts, fruit, honey, powdered sugar, whipped cream, cane syrup, and molasses. American pancakes are similar to Scottish pancakes (Scottish pancakes are slightly smaller in diameter - about 9 cm, and are usually served in the afternoon, at tea time).

These thick pancakes are made from a batter that contains eggs, flour, milk, and a leavening agent, such as baking powder. Yogurt, blueberries, strawberries, bananas, apples, pieces of chocolate, cheese, or sugar can also be added to the dough.

Spices such as cinnamon, vanilla and nutmeg can also be used. Yogurt is added to make the pancakes moist and soft. American pancakes should be about 1 cm thick and about 10 cm in diameter.

The oldest historically verified data say that pancakes were made around 5 centuries BC. They were made from wheat flour, olive oil, honey and sour milk, and people of that time consumed them for breakfast.

American pancakes with banana, ingredients:

  • 200 g of flour
  • 25 g of butter
  • 1 bag of baking powder
  • 1 teaspoon of cinnamon
  • 1 pinch of salt
  • 2 tablespoons of brown sugar
  • 2 pieces of egg
  • 2 pieces of banana (smaller, ripe)
  • 250 ml milk
  • vanilla (flavor)
  • maple syrup (for topping)

American pancakes with banana, preparation:

  1. Melt the butter and put it in a warm place, so that it stays melted and heated.
  2. Sift the flour into a large mixing bowl. Add baking powder, salt, cinnamon and brown sugar.
  3. Separate the yolks from the whites. Beat the egg yolks. Slowly add the milk to the egg yolks, while mixing. Add 1-2 drops of vanilla food flavoring. Add melted butter, stirring. Mash the bananas well with a fork and add to the mixture. Add the flour, a tablespoon at a time, stirring constantly to avoid lumps. Mix until the mass is completely combined. Let it stand for 5 minutes.
  4. Beat the egg whites until the mixture becomes stiff snow. Add the egg whites, spoon by spoon, to the batter for American pancakes with banana, with very gentle mixing (turning).
  5. Heat a pan with a little butter or oil. Pour the pancake mixture so that the size of the pancakes is about 10 cm in diameter and about 5 mm thick. Bake until bubbles appear on top, then flip. Cook on the other side for about 1 minute more.
  6. Keep the finished American banana pancakes warm until they are all ready to serve.

Serve drizzled with a little maple syrup, with a few extra banana slices. Or, add seasonal fruit.
