Aromatic vegetables - cheap, healthy and tasty lunch.

  • 600 gr. pumpkins
  • 600 gr. potato
  • 2 dl. cooking cream
  • 2 dl. milk
  • 2 eggs
  • 30 gr. butter
  • 100 gr. cheese
  1. Peel the potatoes and cut them into pieces. Cut the pumpkin into pieces about the same size as the potatoes. Put potatoes and pumpkin in a pot, cover with water and cook for 20 minutes. until the vegetables are soft. Strain.
  2. Meanwhile, finely chop the onion. Beat the eggs, milk and cream in a bowl. Add salt and pepper to taste. Grease a fireproof bowl well with butter, alternately arrange the pumpkin, potato and onion, cover with the beaten mixture and put the second layer of pumpkin, potato and onion and the remaining mixture. Sprinkle with grated cheese and bake for about 30 minutes. at 200 degrees.
