Book Traditional recipes of domestic Serbian cuisine - Author's team

Traditional recipes of domestic Serbian cuisine is a future book, which is being intensively worked on. A small team of authors, gathered around the portal Recipes and Kuvar online, collects and selects old recipes, which were created before the Second World War in these areas.

The author team consists of: Miodrag Ilić, author of the book; professor Dr. Slađana Šobajić, author of the foreword and expert associate; Dejan Ilić, professional associate and gastro editor; Kristina Gašpar, professional associate and gastro editor; Snežana Kitanović, professional associate.

The tradition of Serbian cuisine is very old. One of the oldest Serbian cookbooks was the Serbian cookbook of the Hieromonk of the Krušedol Monastery, Jerota Draganović, printed in 1855 in the Old Slavic language. And one of the most learned people at the end of the 19th and beginning of the 20th century, Sima Trojanović (ethnologist), in 1896 published the book Old Serbian Dishes and Drinks.

The list of such old collections of recipes, cookbooks, books of customs is quite long. These books represent our basic motivation and driving force to start and finish this project, with the basic idea: to preserve from oblivion a part of the culinary and cultural heritage of our ancestors.

In this book, readers will be able to find many old dishes, which today are on the verge of being forgotten, which can very rarely be ordered in restaurants, and which are rarely prepared in the family circle. The book will be printed in Serbian and English.

Dr. Slađana Šobajić is a full professor at the Department of Bromatology, Faculty of Pharmacy, University of Belgrade.

Slađana Šobajić received her master's degree in 1991 at the Faculty of Pharmacy in Belgrade. She defended her doctorate in 1996 at the Faculty of Pharmacy in Belgrade, for which she received the Galenike award for the best doctoral dissertation.

At the Department of Bromatology, Dr. Slađana Šobajić participates in the teaching of integrated academic studies in both majors within the subjects of Bromatology, Food Safety Control 1 and 2 and Dietetics, and within postgraduate studies - academic specialist studies, health specialization and doctoral studies.

Since 1996, Dr. Slađana Šobajić has been participating in the projects of the Ministry of Science, Technology and Development of the Republic of Serbia. He is the co-author of 132 scientific and professional papers, of which 26 papers in journals from the SCI list with an impact factor and 35 papers in national journals. He is the co-author of a university textbook. He is a member of the Etc Committee for Clinical Trials, a member of the Faculty Council and a member of the Committee for Doctoral Studies.

Dr. Slađana Šobajić has been the president of the Society for Nutrition of Serbia since 2008.

Dr. Šobajić's research interest is in the fields of food chemistry and dietary products; physiological, biochemical, health effects of food ingredients; assessment of intake of nutrients, additives and contaminants in lipidology.

Dejan Ilić is a professional chef and carving master. A former professional athlete, volleyball player, with a natural competitive spirit, ventured into food decoration 10 years ago, with great success. Numerous competitions and numerous medals are proof that Dejan Ilić managed to combine sportsmanship, desire for success, talent, love, commitment and persistence.

In Istanbul 2014, he won his first medals, two gold and one silver. In the same year, he participated in competitions in Innsbruck, Sofia, and the most important competition was the World Cup in Luxembourg. In those competitions, he won a total of two gold, three silver and one bronze medals. In Luxembourg, at the World Cup, as the only representative of Serbia in the individual competition, he won a silver medal, which is the first medal for Serbia in carving at such a big competition.

Kristina Gašpar is a "gastro blogger", as she doesn't like to be called, the founder of a food blog called "Domaćica za vas", a great expert and lover of cooking and food. He is the author of numerous recipes that have found their well-deserved place in "Magazin" (Politika) and "Stvar ukasa" (Adria Media), Danas online, ...

She has been a vegetarian for many years, and her main motto is: "The taste is not to be discussed! De gustibus non disputandum est!”

He finds inspiration everywhere. Even when he sees some food at the market or in the store, he gets an idea and knows what to make of it, and then how to photograph it.

For Kristina, obviously, a dish (recipe) is not enough by itself... She puts presentation, arranging and combining, at least the same, or a higher priority.

For all other "bloggers", an average photo, something "thrown" on a plate, dark and blurry, is something they are proud of... However, for Kristina, this is unacceptable... For her, composition and good photography are the result of serious work.

Miodrag Ilić is the initiator and editor-in-chief of the portal "Recipes and Cookbook online”, which is a registered online media, and is the director of the company “Linkom-PC” doo, which is also the founder of the portal.

Linkom-PC doo is a company that has been present for 20 years in the IT market of the region, although a micro company in size, it leaves an indelible mark with its engagement and participation in the largest projects.

The result of all that was two significant IT Awards in 2014: Certificate of Excellence – IT innovation of the year, Certificate of Excellence – Special award for contribution to IT Infrastructure, which was awarded by the IT Awards jury, led by Professor Dr. Dragan Ćosić, in the international competition of registered IT projects.

The "Recipes and Cooking Online" portal, after only two years of operation, receives the prestigious award TOP 50, which ranks this portal among the 50 best sites in Serbia for 2015, according to the decision of the jury of PC Press magazine.

At the beginning of 2017, Miodrag Ilić launched a campaign to collect traditional recipes, the origin of which must be before the Second World War, on the Recipes and Kuvar portal. This project, as unusually important for the preservation of the intangible cultural traditions of the peoples living in these areas, was institutionally and organizationally supported by the Serbian Chamber of Commerce:

"Traditional recipes of local cuisine are an important part of the intangible cultural heritage of every nation. In the list of elements of the intangible cultural heritage of the Republic of Serbia, in addition to old crafts, folk customs, songs and dances, along with the naive painting of the Slovaks, there are also Belmuž, the making of Pirot cheese, and Pazar mantija (traditional preparation method). These elements are important for the preservation of national identity, but they are also an indispensable part of various tourist products.

The project of collecting and promoting traditional recipes of domestic Serbian cuisine through the portal Recepti i Kuvar online and the publication of the book Traditional recipes of domestic Serbian cuisine will introduce new elements into the tourism offer of Serbia. We also estimate that it will enable better visibility of the cultural, culinary and customary history of these areas, which will aim to better inform individuals and business entities in the country and abroad."

This campaign will end with the publication of the book Traditional recipes of Serbian cuisine at the end of 2017 and the beginning of 2018.
