At the beginning of the 20th century, in central Serbia, there was a tradition of making dairy products, which they called white fig or white mrs: cream, cheese, whey.

White fig is made from cow's milk, sheep's milk, and very rarely goat's milk. The expressed milk was squeezed through a strainer, and then boiled in a kettle (it had to be tinned), with special care, so that it would not boil over. When the milk boiled, it was poured into cooling vessels, so that it would cool down and form a crust - cream.

The next morning, they would remove the cream, which they put in special dishes (pots) along with salting. They would return the milk to a clean kettle, where it would curdle. At that time, cheese was a favorite dish and the most common food.

Cream is made from unboiled milk - if the milk was left overnight, in the morning they would remove the rind (scum), which they called - cream.

And Dragan Đorđević, CHO Associations of authentic hedonists, spoke about the white mrsa at one of the workshops during IV Balkan Cheese Festival:

"This cheese is solidly strong, and in combination with dates, serves to satiate us a little more at first. It is very simple to make. I don't know if you know about the tavern, which was near Belgrade, I forgot the name. People used to go to that tavern for lamb or pork. However, when you get there, you get the so-called "white mrs". Do you know what it is? Well, they are: cream, cheese... Pay attention! We came for the lamb, and first we get the "white mrs"! We get cream, which is fantastic and bread which is hot.

When the lamb comes, you are no longer interested in anything... And we all came for the lamb... What is the "white mrs" for - to deceive the guests!"

So, as Dragan said, if you want to fool your guests, white smok (white mrs) is the right solution!
