Bosnian pot – this recipe is from an old cookbook. The most delicious Bosnian pot prepared in an earthen vessel, on fire. The court it must be permanently covered and must not be opened.

My old grandmother from Macedonia prepared a similar dish in a tall earthen pot, leaning on the embers of a simmering fire, covered with an old tray made of coffee cups, for about 3-4 hours. Nothing sweeter.

Recipe variations are common, and depend on what one has available at the time. In modern kitchens, cookware and pots made of rosfray can be used, but they must also be covered at all times during preparation, without opening. You can also use a pressure cooker, which takes about 45 minutes to prepare.

  • 400 g lamb meat (cut into larger cubes)
  • 400 g of beef (cut into larger cubes)
  • 1 piece of cabbage (smaller head, chopped larger)
  • 300 g potatoes (cut into cubes)
  • 2 pieces of carrots (cut into larger pieces)
  • 2 pieces of parsley root (cut into larger pieces)
  • 1 piece of parsnip root (cut into larger pieces)
  • 2 red onions (sliced)
  • 5 cloves of garlic (sliced)
  • 3 pieces of tomato (chopped coarsely)
  • 1 piece red pepper (coarsely chopped)
  • 2 pieces of okra fruit (roughly cut)
  • 2 teaspoons ground paprika
  • 2 tablespoons dry seasoning (or salt, 1-2 tablespoons)
  • 1 teaspoon of pepper

  1. Pour 2-3 spoons of oil into a pot, or an earthen vessel, then add the cabbage, meat, and other ingredients, and lastly put the tomatoes and spices: salt and pepper. Pour water to soak. Cover the pot and do not open it for the next 3-4 hours. The temperature must be quiet/low, because the whole secret is in slow cooking. Serve the Bosnian pot warm in deep plates, garnished with parsley leaves. Pleasant!
