Chicago Style Deep Dish Pizza, ingredients:

  • dry yeast (2 and 1/4 teaspoons)
  • white sugar (1 and 1/2 teaspoons)
  • warm water (1 and 1/8 cups)
  • flour (3 cups)
  • corn oil (1/2 cup)
  • kosher salt (1 and 1/2 teaspoons)
  • turkey

Chicago Style Deep Dish Pizza, preparation:

  1. Pour warm water (43-45 degrees C) into the bowl. Dissolve yeast and sugar. Leave to stand for 5 minutes, to create a foam from the yeast.
  2. Add flour, corn oil, kosher salt and beat with a mixer for about 2 minutes. The dough should be slightly sticky.
  3. Transfer the dough to another bowl, which is greased with butter. Cover the bowl with a damp towel or cling film. Let it stand for 6 hours. During this time, the mass of the dough must double.
  4. Remove the dough from the bowl and let it rest for another 10-15 minutes.
  5. Put the dough in a greased deep baking dish (eg a pan with a heat-resistant handle, or similar), with the raised edge next to the edge of the dish.
  6. For the filling, use standard ingredients: tomatoes, mushrooms, ham, mozzarella, etc... as desired.
  7. Bake in a preheated oven until the edges are golden brown.
