You must have heard that it is medicinal in tea and various drinks, such as syrup. And did you know that it can be made into a soup that raises the level of iron in the blood with just one plate eaten.

Have you ever tried nettle? You're probably wondering, why on earth would we?! First of all, yes, it is edible and no, it does not burn when you eat it. Secondly, it is very tasty and healthy. And not only that, it is one of the richest sources of iron among plants and an excellent source of protein that cleans the blood and liver.

If by any chance your iron "fell out" at the moment when you most need to be "on your feet", one plate of this soup solves the problem!

READ: NETTLE JUICE

We assume you are wondering where you can buy nettles. Do you have to go for a walk in nature with gloves and scissors in your hands? Well, you don't have to. You can find it behind your cottage, but also at the market and in health food stores. It is quite cheap, one bag costs 50 dinars, and it is enough for a meal for the whole family.

Ingredients for: 4 people. Preparation time: 30 minutes.

For the broth:

  • olive oil
  • 3 large leeks (1 cup sliced)
  • 2 young onions
  • 2 large cloves of garlic
  • 2/3 teaspoon salt
  • 1/2-2/3 teaspoons of ground coriander
  • 3 teaspoons of oatmeal
  • 200 grams of nettle
  • a sprig of fresh basil

For the spicy mushrooms:

  • 300 g of shiitake
  • a pinch of salt
  • a pinch of chili
  • a little thyme or dried Mediterranean herbs
  • olive oil for frying
  • a pinch of salt

To serve:

  • parsley
  • sour cream
  • herbs (fresh parsley, coriander)

<strong>Preparation: </strong>

  • Briefly saute the sliced ​​leeks, scallions and garlic with a pinch of salt in olive oil. Add coriander, salt and 4 cups of water. When it boils, cover and cook on low heat for 5 minutes.
  • Then add the oatmeal and cook for another 5 minutes.
  • Add the washed nettles. It will look like there is too little water and too much nettle, but just press it so it is at least partially covered with liquid and cover. Cook for 3-5 minutes, depending on how young the nettles are. Be careful not to overcook it.
  • Check with your fingers to see if the stem has softened. If so, it's time to drain it and cut it into small pieces. If you have more time and opportunity, you can mix it in a blender until it becomes completely creamy. It will look a little watery at first, but let it sit.
  • Before serving, feel free to return the broth to the stove and reheat it. Then pour it into plates, add the mushrooms that you previously fried on top, a spoonful of sour cream and sprinkle herbs on top.

The soup made in this way can replace the soup because it is very filling, but above all it is healthy.
