Chickpea soup is easy to prepare. It is a very tasty and nutritious appetizer or main dish.

  • 300 g of chickpeas
  • 1 cloves of garlic
  • 1 piece rosemary (sprig)
  • parsley (sprig)
  • 3 tablespoons olive oil (extra virgin)
  • 2 tablespoons of olive oil

  1. Wash the chickpeas and soak them in cold water. Chickpeas must stand in cold water for at least 12 hours.
  2. Add 2 tablespoons of regular machine oil to the heated pan. Lightly fry the chopped garlic and chopped rosemary. Remove the garlic and rosemary from the oil. Drain the chickpeas well and add them to the oil and fry for a maximum of 3 minutes.
  3. Transfer the fried chickpeas to a cooking pot and cover with plenty of water. Chickpeas need to be cooked for about 2,5 hours. About 10 minutes before the chickpeas are ready, season with salt and pepper to taste.
  4. Serve warm, garnished with fresh parsley leaves and drizzled with extra virgin olive oil. To taste, you can grate parmesan cheese, so it can be added to the chickpea soup if you like.
