Children's Carbonara - my husband and I love Carbonara, but they are quite "difficult" for our daughter, so here is a variation on how you can prepare them for children 1+ years old.
- 2 pieces of white potatoes
- 20 g of bacon
- 30 g of mozzarella cheese
- Peel and grate the potatoes into thin strips or cut them by hand.
- Cut the bacon into short strips or grate it. I use pancetta.
- Put the potatoes in a pan with a little olive oil and fry for about 1 minute, then add a little water and cover. Knead gently from time to time so that it does not fall apart for about 5 minutes.
- Open and let the water evaporate and add the bacon and fry a little.
- While it is still warm, add the mozzarella and stir until it melts.
- Instead of mozzarella cheese, you can make besamel (flour and milk).
- From the spices, you can add a little pepper and pepper according to what you are used to eating the child.
- Check that it is not hot and serve to the child.
