  • 20 g of gelatin
  • 8 tablespoons of cold water
  • 100 g of melted honey
  • 75 ml of water
  • 30 ml of lemon juice
  • 20 ml of orange juice
  1. Pour 8 tablespoons of water over the gelatin and let it stand for about 10 minutes.
  2. During this time, melt the honey at a lower temperature. Heat the water and juices to boiling point.
  3. Pour the mixture of water and juice over the gelatin and stir until it dissolves, then add the melted honey. Mix again until all ingredients are combined.
  4. Fill silicone molds for pralines. Let the candies cool down well, then put them in the fridge for an hour.
  5. From this amount, you will get about 300 g of candy. The number of candies depends on the size of the mold as well as how many you fill them with.

  7. What I would change in this recipe is the amount of liquid - I would reduce it so that the candies have a firmer texture. I would also replace the water with fruit juice, ie. instead of a total of 125 ml of liquid, it seems to me that it would be better if 110 ml of fruit juice were used, and I would also add some sugar, maybe around 30 g. I would melt the sugar in the juice.
  8. I think that in that case the candies would be more faithful to the original, and therefore tastier.
  9. Let your imagination run wild when it comes to choosing fruit juices, and you can also use fruit syrups, but in that case you should take care of the amount of sugar and honey so that they are not too sweet.
