Homemade rumenko - the best cooling (RECIPE) - Pixabay

Both young and old adore the most famous ice cream from childhood - Romanian. Even today, it is a favorite of many, but in order not to buy it every time, you can make it very easily at home. All you need is seasonal fruit, lemon juice and natural sweetener. Prepared in this way, it will not only be delicious, but you will know what you have eaten.

Homemade rumenko - ingredients:

  • 250 grams of strawberries or raspberries
  • 1/4 cup brown sugar (2 tablespoons honey)
  • 1/2 cup coconut milk or Greek yogurt
  • 2 tablespoons of lemon juice
  • 1/2 vanilla stick

Homemade rumenko, preparation:

Cut the fruit into small pieces and mix together with sugar. Leave such a mixture to stand for 30 minutes. Stir occasionally until it turns into a syrup. Then add the rest of the ingredients to the mixture and mix until you get a compact texture.

You can buy wooden sticks and upright ice trays at any store. Pour the mixture into them, and then stick them upright after the mixture has hardened a little. Chill them in the fridge for at least four hours or preferably overnight.

Additional tip:

Although rumenko is the favorite ice cream of many, you can make it from any other fruit that is in season, because it is best to use fresh fruit to prepare this recipe. For a creamier texture, choose Greek yogurt. Inside the mixture, you can also add pieces of fresh fruit for a fuller and more natural taste.

If you don't have ice molds, you can pour the mixture into glasses. When taking the ice cream out of the mold, leave it to cool a little, because it will be easier to separate it from the edges of the container.
