Homemade Citrus Syrup – If you have unsqueezed citrus, use it to the full.

  • 150 g lemon with peel (unsqueezed)
  • 100 g of lemon without peel
  • 150 g of oranges with peel (unpeeled)
  • 100 g of red grapefruit without peel
  • 7 dl of water
  • 500 g of sugar
  1. Cut the fruit into smaller pieces, pour water and boil for five minutes. Then strain the liquid, blend the fruit, return it to the liquid, mix well and strain the remaining pulp, save it. Pour sugar into the strained juice and cook for about 3 minutes from the moment the juice boils.
  2. Pour into a sterilized bottle.
  3. From this measure you will get 1 l of syrup.
  4. When serving, add fresh lemon juice.
  5. If you don't like bitter tastes like bitter lemon, peel all the fruit, but leave one lemon and one orange peel for flavor. In that case, you can reduce the amount of sugar by about 100 g.
  6. From the pulp that remained after straining the juice, you can make a delicious marmalade by adding as many grams of sugar to the pulp as the pulp weighs (provided that you used the listed citrus fruits with peel, if you used them without peel, reduce the sugar). .
  7. Cook the marmalade for about 10 minutes at a lower temperature, until it thickens a little (when it cools it will be much thicker than when it is hot, so you don't need to worry about the thickness). Pour into a lined jar and use it for cakes, desserts...
