Homemade zhu-zhu - puff pastry that you can't resist!
for the dough:
- 600 ml of water
- 1 teaspoon of salt
- 900 g of flour
for coating:
- 250 g of margarine
- 1 piece of yolk
- 3 tablespoons yogurt
- 30 g sesame
- 1 teaspoon of sea salt
- Knead the dough from water, salt and flour. Make a good dough and immediately roll out a large crust with a rolling pin. Grate whole margarine.
- Fold the dough first into three strips, then fold the dough in half on one side and then fold the other side over the first.
- You folded the dough like a letter. Cut all the folded edges with a knife, on all sides.
- Cover the dough with a plastic bag and let it rest for at least 20 minutes. Due to natural fermentation, the dough is better and has bubbles if it stands or rests for a longer time. Fold the process three more times with the same order of folding the dough and with a break of 20 minutes each. Be sure to cover the dough with a plastic bag. Flour a work surface and use a rolling pin to roll out a square crust to approximately 15 mm thick.
- Cut squares as desired with a rolling pin. I have cut both smaller and larger ones, but I liked the small 1×1 ones the most. Arrange them in a tray with a slight distance.
- Beat the egg yolks with yogurt and coat each one with a brush. Sprinkle with sesame seeds and sea salt. Let them rest for 20 minutes and bake at 220 C until they are golden brown and flaky.
- It's a pleasure to watch them scroll.
