Green bean stew - a favorite seasonal main dish.

  • 1 kg of green beans
  • 3 heads of red onion (finely chopped, medium heads)
  • 2 cloves garlic (finely chopped)
  • 1 teaspoon ground paprika
  • 1 piece bay leaf
  • 0,5 teaspoon of oregano
  • pepper (to taste)
  • salt (to taste)
  • 500 g of young beef (or veal, cut into cubes)
  • 400 g tomatoes (cut into smaller cubes)
  • olive oil
  1. Add a little olive oil to the pan and heat it to medium heat. Sauté green beans for a few minutes. Remove the green beans to a plate.
  2. Add a little olive oil to the pan and heat it to medium heat. Saute the red onion and garlic until the red onion has a glassy appearance. Add ground pepper, bay leaf, oregano, pepper and salt, to taste. Simmer for another minute and remove to a plate.
  3. Add a little olive oil to the pan and heat it to medium heat. Add beef or veal and stew until the meat turns golden.
  4. Heat the oven to 180 degrees C.
  5. Grease a refractory glass baking dish (or a ceramic one, called a "džuveč") with olive oil. First put a layer of green beans, then onions, then tomatoes, and put stewed meat on top. Pour over the oil and juices released by the meat. If necessary, add a little water. Bake in the oven for about 20 minutes. Serve warm, and make mashed potatoes as a side dish.
