Nectarine and bourbon vanilla. I have never liked peach jam because of the smell, which is not the most pleasant. My aunt made it this year nectarine jam.

The taste and smell are different from peach jam. However, in my opinion, something was missing. At first I thought I'd add some tomatoes and oranges, then I saw the bourbon vanilla grinder. This is how another delicacy combination was created - nectarine jam with bourbon vanilla.

The amount of sugar depends on how sweet the nectarines are.

Ingredients (for 500 ml of jam):

  • 600 g of cleaned nectarines
  • 120 g of sugar
  • bourbon vanilla to taste.

<strong>Preparation: </strong>

  • Chop the nectarines, add sugar and 1/2 dl of water (water is needed to make the nectarines easier to cook if they are not soft enough).
  • Cook at a lower temperature for about 30 minutes.
  • If you wish, you can partially chop the nectarine jam with a stick mixer.
  • Add vanilla and cook for another ten minutes.
  • Pour the nectarine jam into sterilized jars and store in the usual way.

If you don't have a bourbon vanilla stick, you can replace it with vanilla sugar.

The taste of this jam is special. It resembles apricot jam, but still has its own specific note.

In the smaller jar, there is nectarine jam at the bottom, and pear, grape and plum jam at the top. I had a little bit of both, so I combined them. The combination of jams had a positive effect on the composition.

I think that nectarine jam could be prepared without sugar, but on the condition that the nectarines are fully ripe and soft.

Sugar-free nectarine jam should be cooked at a lower temperature for a little longer than usual in order to cook it as well as possible.

Many people ask me how much nectarine waste is when they are cleaned. I just measured them - from 2,5 kg of nectarines, I got about 2,1 kg of cleaned ones. How much the stones will weigh depends on both the type of nectarine and the size of the fruit.

This year (2016) the nectarine jam has a slightly different color - a red shade. The color of the jam also depends on which type of nectarine you use. The nectarines I used now were extremely sweet, so I put 1 g of sugar on 150 kg of cleaned nectarines.
