Resh-roasted Greek chicken with crispy skin and resh-roasted potatoes - an explosion of taste!

  • 4 pieces of chicken drumstick and drumstick
  • 600 g of new potatoes
  • 0,5 cup of olive oil
  • 2 lemons (squeezed into juice)
  • 2 teaspoons basil (dried)
  • 2 teaspoons oregano (dried)
  • 1 teaspoon of sea salt
  • 1 teaspoon black pepper (ground)
  • 1 teaspoon of spice mix
  1. Heat the oven to 220 degrees C.
  2. Place drumsticks with carabataki on a baking tray. In a large bowl, mix the potatoes with the juice of 1 lemon, basil, oregano, salt, pepper and spices. Arrange the potatoes around the chicken on the baking sheet. Drizzle the remaining juices and oil over the chicken.
  3. Bake in a preheated oven for about 30 minutes. Remove the potatoes and place them on a paper towel. Return the chicken to the oven and cook for another 15 minutes.
  4. Check if the chicken is cooked: the meat must not be red near the bone, and the juices coming out of the meat must be transparent. If the meat is not cooked, cook it for another minute and check again.
If you want really crispy chicken skin and crispy baked potatoes, bake under an infrared heater for the last 5 minutes. And don't forget the tzatziki too Greek salad!
