Greek salad recipe - This is an original recipe for a Greek, peasant, homemade salad ("horiatiki" in Greek).

Horiatiki means "the peasant way" and means this Greek salad recipe has a rustic look and feel, with its roughly chopped ingredients glistening beneath a generous coating of extra virgin Greek olive oil. Serve the Greek salad with homemade crusty bread.

The original Greek salad recipe is made with tomatoes, cucumber, extra virgin olive oil, olives and feta cheese, and there are various variations throughout Greece. One of the variations refers to the "substitution" of cheese, so instead of feta cheese, a white soft cheese is used, and on some islands, barley dvopek is added, through which the other ingredients are chopped.

It is rich in fiber and antioxidants, thanks to the combination of tomatoes, onions and olive oil. Feta cheese is the perfect supplement that provides the necessary protein. One serving of Greek salad will serve you about 600 calories, 100% of your daily needs for vitamin C and 50% of vitamin A and vitamin B2.

Salad or main course, with chilled ouzo (ouzo) or a glass of cold Greek wine retsina (retsina), is your choice for hot summer days.

Greek salad recipe, ingredients:

  • 4 ripe tomatoes,
  • 1 red onion,
  • 1 cucumber,
  • 1 green pepper (not spicy)
  • 150 g feta cheese (Greek)
  • 10 olives (Greek, Kalamata)
  • oregano (dried)
  • salt (sea)
  • olive oil (extra virgin, Greek)
  • wine vinegar

Greek salad recipe, preparation:

  • Wash and chop the vegetables.
  • Put the sliced ​​tomato, red onion, cucumber, and green pepper in a salad bowl.
  • Sprinkle with some oregano.
  • Add a little quality extra virgin olive oil and red wine vinegar. Stir.
  • Place a large piece of feta cheese over the vegetables.
  • Pour a little olive oil over the cheese and sprinkle with some oregano.
  • Serve with rustic homemade bread with a dark crust.

Greek salad recipe basic rules:

  • Lettuce or any other leafy greens are not added to the salad.
  • Do not mix the salad before you serve it.
  • Feta cheese is not cut into cubes, but a large piece is placed on top of the salad.
  • Tomato and cucumber should be cut into fairly large pieces, not small cubes.
  • There is no red pepper in the traditional Greek salad.
  • Olives are added whole, not cut.
  • The salad is served with bread, not pita bread.
  • The salad is served in a shallow dish - do not serve it in a deep dish.
  • Use the best ingredients. Be sure to add extra virgin olive oil, seasonal ripe tomatoes, juicy Greek Kalamata olives, good fragrant oregano and real feta (Greek) cheese...
  • Some here in Greece do not add vinegar. Wine vinegar is added because of the cucumber. Tselementes' cookbook, which is one of the first traditional Greek recipe books, also mentions vinegar.
  • No mustard, no lemon and definitely no garlic.
  • Some Greeks do not add wine vinegar, but simply pour extra virgin olive oil over the salad.
  • If you add wine vinegar, an estimated ratio is 2:1 in favor of extra virgin olive oil.
  • When topping with olive oil, don't skimp. Greek salad must be soaked in extra virgin olive oil and not just coated.

How to choose quality extra virgin olive oil for Greek salad?

Extra virgin olive oil is obtained after the first pressing of the olives, in order to be able to get the name extra virgin, it must not have an acidity higher than 0,8 percent (of free fatty acids, calculated as oleic acid). However, this limit is not difficult to reach, so olive oils of rather poor quality can be sold under extra virgin oil.

Therefore, when choosing a quality extra virgin olive oil, focus only on oils that have an acidity of less than 0,5 percent. This way you will be sure that the olives are pressed immediately after picking. Of course, if you can, try the oil before buying - you will recognize the quality by its slightly bitter taste. You can also pour some oil on your palm and smell it - you should smell olive or grass.
