Zucchini spaghetti stew - Snežana Kitanović - Recipes and Cookbook online
Goulash with zucchini spaghetti - a recipe for chronic nutrition.
- 0,5 kg of beef
- 0,5 kg of onion
- 2 spoons of spices for stew
- celery leaf
- Himalayan salt (to taste)
- beaver
- oil (grape seed)
- water
For the spaghetti:
- 3 pieces of zucchini (2-3 pieces)
- Finely chop the onion, put it to stew until it becomes glassy.
Then add the previously diced meat.
Add pepper, salt, celery leaf and continue stewing with occasional addition of water.
When the meat is well stewed, add the goulash seasoning, stir well to combine, and then pour cold water.
When it boils, cook on low heat for another half hour.

This is a delicious variant of the famous dish where zucchini noodles are used instead of classic spaghetti.
Thus, this dish becomes a rich protein meal with a very low carbohydrate content.
You can cut thin zucchini noodles by hand or with a chopping device, similar to a potato peeler. Cut the zucchini thinly so that nice long strips like spaghetti are formed.
Add the zucchini to the boiled and salted water for 3-4 minutes to soften a little, do not boil them, then strain them and pour the stew over them.
