Buckwheat pita is a specialty of my region, the southwestern part of Serbia. No celebration, big or small, is complete without this specialty, which is served as an appetizer.

Buckwheat pie is made from pancakes filled with cheese, cream and eggs. For the filling of this pie, I use fatty cheese from Zlatar, which gives this pie a special taste.

Buckwheat pita is a specialty of my region, the southwestern part of Serbia. No celebration, big or small, is complete without this specialty, which is served as an appetizer.

Buckwheat pie, ingredients:

For the pancakes:

  • 2 pieces of eggs
  • 150 g of buckwheat flour
  • 300 g of wheat flour
  • 4,5 dcl of milk
  • 4,5 dcl of carbonated water
  • 1 teaspoon of salt

For the filling:

  • 300 g of cheese
  • 1 glass of sour cream (180 gr)
  • 2 pieces of eggs

To fry the pancakes:

  • 10 teaspoons of oil

Heljdopita, preparation:

  1. Knead the pancake batter. Put 2 eggs in a bowl, add salt, milk, wheat and buckwheat flour. Add carbonated water and beat until the mass is uniform. The mass should be a little thicker than for ordinary pancakes. Let it stand for 15 minutes and then fry the pancakes. This amount of dough yields 10 pancakes with a diameter of 22 cm.
    Put 1 teaspoon of oil in the pan, when it heats up, put 1 ladleful of dough and fry on one and the other side. Use 1 teaspoon of oil to fry each pancake. Fill the fried pancakes.

  2. Make the filling.
    Melt the cheese, add sour cream and 2 eggs. Mix well.
    Put 1 pancake (the container in which we will fill the pancakes so that it is the same size as the pancakes), spread it with 1 spoon of filling (not a flat spoon, but a fuller spoon), again pancake filling and so on.
    When we put the last pancake, cut it crosswise into triangles. Spread with 1 tablespoon of the remaining filling.
    Bake the so-composed whole-wheat pita at 200 degrees for 30 minutes to get a golden brown color.
  3. If we are making a whole wheat pie with twice the mass of the dough, then the container for filling the pancakes is also larger. Then cut the halibut pita into cubes and bake.
