Chrono lunch - hake with pistachios and leeks.

  • 4 hake fillets
  • 1 piece of leek (medium, cut into rings)
  • 2 cloves of garlic (thinly sliced)
  • 20 ml of white wine
  • 20 g of butter
  • so
  • 50 g of pistachios (broken)
  1. Wash the leek well. Cut into rings. Finely chop the garlic.
  2. Heat the pan to medium temperature. Melt the butter. Sauté the garlic for about 2 minutes. Reduce the temperature to a minimum. Add the leek and simmer for about 10 minutes, until it is half stewed. Add white wine and simmer for a few more minutes. Remove from heat. Season with salt and pepper and mix.
  3. Preheat the oven to 210 C.
  4. Put the leek mass from the pan into a refractory baking dish. Lay the hake fillets on top, add salt and pepper to taste. Place crushed pistachios over the fillet. Bake for 10-15 minutes until the fish is done. Serve warm.
