Crispy fan eggplant - everyone in the house loves blue eggplant, yesterday I saw a photo of this dish on my friend Anna's profile.
You don't even need a recipe, the preparation is simple, it's easy to prepare, and it looks very nice.
Crispy eggplant fan, ingredients:
- 3-4 eggplants, depending on the size
- 4 pieces of eggs
- 100 grams of breadcrumbs
- 100 grams of wholemeal flour
- 150 grams of plain flour
- salt to taste
- oil for frying

Crispy eggplant fan, preparation:
- Peel the eggplant, cut it into slices 1/2 cm thick. Cut each schnitzel into strips up to half of the schnitzel in the shape of a fan. Add salt and leave for some time to release water and soften. Drain it thoroughly.
- During this time, beat the eggs, add a little salt. Roll each cutlet first in flour, then in beaten eggs.
- Then into the wholemeal flour mixture and breadcrumbs.
- It is best to fry them in a deep fryer.
- Place the fried ones on kitchen paper to absorb the excess fat.
- Serve them with side dish and salad as desired.
