Traditional Irish potato pancakes are made from a mixture of mashed potatoes and grated potatoes, which gives them a unique texture and appearance.

  • 900 g potatoes (peeled)
  • 0,75 cup of milk
  • 1,25 teaspoon of salt
  • 1 piece of egg
  • 0,33 cup flour
  • 0,25 teaspoon of pepper
  • 1 tablespoon butter (1-2 tablespoons, cut into small cubes)
  1. Heat the oven to 100°C
  2. Roughly dice half of the potatoes and add to a medium saucepan. Add salt as desired and pour water into the pan so that the water level completely covers the potatoes. Keep on high heat until it boils, reduce to a lower temperature and let it simmer for 8-10 min.
  3. In the meantime, coarsely grate the other half of the potato. Place a colander over a bowl or medium-sized bowl. Add the grated potatoes to the strainer and season with 1/4 teaspoon salt. Set aside.
  4. When the potatoes are cooked, drain them and put them back in the pot. Add 1/4 cup of milk and mix in the mashed potatoes.
  5. Press the grated potatoes against the bottom of the colander with a pressure cooker until the liquid is drained, then add the drained grated potatoes to the pot with the mashed potatoes and mix gently
  6. Add the egg, 1/2 cup milk, flour, pepper, and 1 teaspoon salt to a large mixing bowl, and beat with a mixer for about ten seconds. After that, add kropmir to the mixture and mix everything with a ladle until the mixture is uniform.
  7. Heat a large non-stick frying pan over medium heat. You can check the temperature by sprinkling a few drops of water on the surface of the pan. If the droplets jump on the surface of the pan you can start, however if the drop evaporates immediately, the pan is too hot and you need to reduce the temperature.
  8. Add enough butter to cover the entire surface of the pan when melted. Using a large ladle, add the mixture to the pan. You can bake several pancakes at the same time depending on the size of the pan. The thickness of the pancake should be about 0.5 cm. Fry until the underside is golden brown, about 4-5 minutes. Turn over to the other side and fry for another 4-5 minutes. Put the finished Irish pancakes on a baking sheet and put them in the oven to keep them warm. Repeat the frying process until you use up the mixture and from time to time add butter before frying.
  9. Serve hot, add side dishes as desired and enjoy Irish Potato Pancakes.
