Jaffa cake.

Jaffa cake, ingredients:

For 2 crusts:

  • 8 eggs
  • 8 spoon of sugar
  • 8 tablespoon flour
  • 8 spoons of milk
  • 1 bag of baking powder
  • 2 tablespoons of grated orange peel

File:

  • 1 baked crumbled crust
  • 5 spoons of apricot jam
  • 2 large grated frozen oranges
  • 150 g of sugar
  • 1 dl of water
  • 100 ml of squeezed orange juice

Frosting:

  • 150 g of cooking chocolate
  • 3 spoons of milk
  • 10 g of butter (or margarine)

Jaffa cake, preparation:

  • Beat 4 eggs with 4 tablespoons of sugar with a mixer. Add 4 tablespoons of milk, 1 tablespoon of grated orange. Beat briefly. Add 4 tablespoons of flour and half of the baking powder. Whip up.
  • Pour the mixture into a 35x25 cm pan lined with baking paper. Bake the crusts at 250 C for about 30 minutes. Bake two crusts. One crust for filling. Crumble the second crust for the filling.

File:

  • Mix 150 g of sugar with 1 dl of water. Crumble one baked crust. Cover the crust with granulated sugar. Add apricot jam, grated oranges. Mix everything well to combine the ingredients.

Note: I always grate the peel and the middle from one orange, and only the middle from the other. Somehow it tastes better to me, orange peel can be bitter sometimes. 

Filling:

  • Put the crust on the tray. Pour 100 ml of squeezed orange juice over the peel. Spread the filling over the crust and shape. Leave to set. Pour a glaze of melted chocolate with milk and butter over the cake.
  • Leave the cake to cool. Cut and serve!
