Eggs with split beans, cherry tomatoes and ricotta toast - mighty white beans are an excellent source of protein, rich in fiber and high in vitamin C, as well as magnesium, a mineral that helps muscles function properly. (excerpt from the book Superfoods for Every Day, Jamie Oliver, Vulcan Publishing)

  • 250 g of cherry tomatoes (various colors)
  • 0,5 piece of lemon
  • extra virgin olive oil
  • 4 sprigs of fresh basil
  • 1 can of white beans (400 g)
  • 1 pinch of fennel seeds (larger pinch)
  • 2 eggs (larger)
  • 2 slices of wholemeal bread with seeds
  • 2 teaspoons ricotta (full)
  • thick balsamic vinegar (optional)
  • hot chili sauce (optional)
  1. Cut the tomatoes in half, place in a bowl and mix with lemon juice, 1 tablespoon of oil and a pinch of sea salt. Separate and tear the basil leaves (save the smaller leaves for garnish), add them to the bowl with the tomatoes and let them rest for a few minutes.
  2. Meanwhile, place a large non-stick frying pan over high heat. Drain the beans and add them to the heated pan along with the fennel seeds and a pinch of black pepper. Leave for 5 minutes and shake occasionally - the beans should be nicely fried and their skins should crack. Pour the tomatoes and 100 ml of water into the pan, season and let it boil for 1 minute. Crack one egg into one end of the pan and the other into the other, then cover with a lid, plate or aluminum foil, reduce the heat to medium-low and simmer for 3-4 minutes, if you want the eggs runny, or longer if you want them harder. Meanwhile, toast the bread.
  3. Divide the ricotta into two parts and spread on hot toasts, then serve with eggs and beans. Sprinkle with the reserved basil leaves and toss. At the end, you can pour a little balsamic and/or hot chili sauce over it. Wonderful.
