And the spoons used to mix vegetables should be wooden. Vegetables are prepared either whole or cut into equal parts. Do not mix whole and chopped vegetables, because they will be pickled unevenly.

Special attention should be paid to vinegar. Every vinegar you buy says what percentage of vinegar it is, and you should follow that when adding it.

Aromatic vegetables or spices can be added to the basic recipes for pickling vegetables, which will affect the taste of pickled vegetables - onion and garlic, bay leaf, vine leaf, horseradish.

Causes of spoilage of pickled vegetables

If too little vinegar or too little salt is added, the vegetables become soft, because in such an environment, harmful microorganisms that soften the vegetables develop. Likewise, cucumbers or other vegetables can become soft if they sit on top of the vinegar in the jar. This spoilage can also occur if the stored vegetables are exposed to high temperatures or if they come into contact with air, or if the jar is poorly sealed. On the other hand, if too much salt or sugar is added, the vegetables will shrivel, shrink.

Gaps in cucumbers occur if the cucumbers are overripe, that is, if they are left for more than 24 hours after being picked. Cucumbers must be pickled a few hours after harvesting. When cucumbers are washed in a larger container, it will be easy to see which ones are hollow: they float on the surface.

Vegetables can turn dark for several reasons: if they are placed in the wrong containers during preparation or if they are mixed with the wrong spoons. It can also darken if fruit vinegar is added to it, which is colored.
