Casserole made of vegetables and cheese - casserole, moussaka, complex... As it suits everyone. If you ask me, it's all more or less the same.

  • 1 piece of eggplant (about 700 g)
  • 1 piece of zucchini (about 300 g)
  • 1 cup tomato juice
  • 4 tablespoons of oil (3-4 tablespoons)
  • salt (to taste)
  • pepper (to taste)
  • oregano (to taste)
  • garlic (to taste)
  • 150 g of mozzarella (or young, melting cheese)
  1. Cut the vegetables into thin rings.

  2. Arrange it in a tray with a diameter of about 26 cm - a row of eggplants, a row of zucchini, a row of eggplants.

  3. Mix tomato juice, oil and spices.

  4. Pour over the vegetables.

  5. Cover the tray with foil and put it in a heated oven at 200-220 degrees.

  6. Bake for about 30 minutes, checking occasionally.

  7. When the vegetables are soft, arrange the cheese slices and return to the oven. Bake until the cheese melts.

In addition to the mentioned vegetables, you can add some more.

In the same way, you can prepare a casserole from other vegetables of your choice, and you can add bacon or some meat.
