Kavurma - Nada Georgijev-Gačić - Recipes and Cookbook online

Kavoorma, poor food. Autumn customs in my Banat.

Kavourma, ingredients:

  • 1 kg of black liver,
  • 1 kg of white liver (lungs),
  • 1 kg of small intestines,
  • 1 kg of onion + 1/2 kg of onion,
  • 50 g of allspice,
  • salt and ground black pepper to taste,
  • bay leaves,
  • 50 g of garlic

Kavourma, preparation:

  • In the meantime, soak well-rinsed pork intestines in a solution of chopped onion and water and keep them for half an hour, with the addition of finely chopped garlic. Remove the intestines from the marinade and cook for ten minutes in a little water with a bay leaf.
  • Fry the chopped onion briefly in fat, add allspice, finely chopped offal and intestines. Mix and fry on high heat for a few minutes, then pour into appropriate bowls.

After preparation and cooking, therefore, you got a mezetluk which is both an appetizer and a main course. Which is eaten both cold and hot. They call it poor food.
