Quiche with vegetables - you can serve this delicious meal both hot and cold for breakfast or dinner...
- 150 g of flour
- 75 g of margarine
- 3 pieces of egg
- 200 g of broccoli (separated into florets)
- 1 small zucchini (cut into rings)
- 2 pieces of carrot (cut into rings)
- 1 onion (cut into strips)
- 1 dl sour cream
- 100 g of cottage cheese ((or hard cheese))
- salt (to taste)
- pepper (to taste)
- 1-2 cloves of garlic (chopped)
- Quickly knead the chopped margarine and flour with your hands, add a spoonful of cold water, 1 egg and a little salt and knead a smooth dough, make a ball, wrap it in thin foil and put it in the fridge to rest for 30 minutes.
- During this time, clean, chop and blanch the vegetables for 2 min. in salt water, then strain.
- Knead the dough once more and roll it out with a rolling pin about 5 mm thick. Line a shallow round tray with dough, then arrange zucchini, onion, garlic, carrot and broccoli over it.
- Beat 2 eggs with cream, then pour over the vegetables. Grate cottage cheese or hard cheese on top and bake in a well-heated oven at 180 degrees. about 45 minutes.
