Dumplings with apricots and yellow cheese - Dumplings with plums are most often made. But in addition to plums, you can use other fruits for dumplings.

Apart from sweet, you can also make salty ones. Dumplings with apricots and yellow cheese - salty for lunch and sweet after lunch or vice versa. As who likes.

Dumplings with apricots and yellow cheese, ingredients:

  • 500 g peeled potatoes (I usually use red)
  • 1 teaspoon of softened butter
  • 1 egg yolk
  • 120 g of sharp flour
  • a pinch of salt
  • if necessary, flour for shaping dumplings, apricots, yellow cheese and spices
  • For the finish: oil and breadcrumbs

Dumplings with apricots and yellow cheese, preparation:

  • Cut the potatoes into cubes and boil them in boiling water.
  • Drain it, add butter and mash.
  • When the potatoes have cooled, mix in the egg yolks, flour and salt.
  • Combine all ingredients.
  • Divide the dough into 14-16 parts, add apricots or cheese and form dumplings.
  • From one half of the dough I made dumplings with apricots, and from the other half with yellow cheese.
  • Cook the dumplings in boiling water until they float to the surface.
  • While the dumplings are cooking, fry the breadcrumbs in hot oil (amounts as needed).
  • Roll the cooked dumplings in breadcrumbs.

Notes:

  • When making sweet dumplings, you can fry the sugar together with the breadcrumbs, although I rarely do this.
    I usually just dust them with vanilla sugar.
  • For savory dumplings, you can add spices to taste - pepper, basil, oregano...
  • I served the salty dumplings with tomato sauce.
  • The amount of flour varies depending on the potato.

Many people ask me why I use strong flour. The explanation is simple - I like the texture better, the dough is more airy, and the dumplings remain the same the next day, they are not hard and gooey. If you don't have strong flour, you can combine plain and wheat semolina.

You can make dumplings with fruit as you wish. They are also wonderful with blackberries.
