Dumplings with plums - if anything grows in Serbia, it's plums. Well, sometimes they fail. But they can't produce so little, that there won't be enough for dumplings with plums... On fasting days, I don't add egg yolks.
Dumplings with plums, ingredients:
- 1 kg of peeled potatoes
- on the tip of a knife of salt
- 120 g of flour
- 1 egg yolk
- 1 tablespoon of oil or butter
Charge:
- 20 pieces of ripe plums
For rolling:
- 150 g of crystal sugar
- 150 g breadcrumbs
- a few spoons of oil
Dumplings with plums, preparation:
- Peel the potatoes, preferably white, cut into slices, cover with cold water and salt. When it is cooked, mash it with a hand grinder.
- Add egg yolks, flour, oil-butter to the cooled mixture. The mixture is kneaded in no time. Take it in your hand, which you can oil, so that the dough does not stick, and tuck a halved plum into the middle. Wrap the dough around the plum.
- Put the water in a large pot to boil, and adjust the temperature to a moderate temperature.
- Lower the dumplings into the water and cook them for another minute or two after rising to the surface.
- In a large pan, fry the breadcrumbs in a little oil until golden brown.
- Use a slotted spoon to remove the dumplings and place them on the breadcrumbs.
- Roll them in breadcrumbs by shaking the pan and sprinkle with granulated sugar.
Warm dumplings are the best for me...
