Cubes with raspberries, ingredients:

for the crust:

  • 5 pieces of egg whites
  • 5 spoons of sugar
  • 2 tablespoons flour
  • 100 g of coconut flour
  • 1 bag of baking powder
  • 300 ml milk

for the raspberry filling:

  • 400 g of raspberries
  • 200 g of sugar
  • 300 ml of water
  • 2 bags of raspberry pudding

for the yellow filling:

  • 5 pieces of egg yolks
  • 7 spoons of sugar
  • 1 bag of vanilla sugar
  • 3 tablespoons of density
  • 2 spoons of flour
  • 300 ml milk
  • 100 g powdered sugar
  • 250 g of butter (or margarine)

and more:

  • 100 g of whipped cream
  • 200 ml milk

Cubes with raspberries, preparation:

 

  1. Beat egg whites with sugar until stiff, mix in flour, coconut flour and baking powder. Pour into a pan (25x35cm), greased or lined with baking paper. Bake for about 15 minutes in an oven heated to 180 C. Remove the baked crust, remove the paper and return it to the baking sheet. Pour cold milk over the warm crust.

  2. Boil the raspberries with sugar for about 5 minutes, pour in 250 ml of water and cook until it boils. Mix the pudding with 50 ml of water, pour into the raspberries and cook until it thickens. Pour over the crust and leave to cool well.

  3. Beat egg yolks with sugar and vanilla sugar, add a little milk, thickener and flour. Heat the remaining milk (but do not boil), pour in the whipped mixture and cook until it thickens. Cool well at room temperature and mix with butter/margarine mixed with powdered sugar. Put the yellow filling on top of the cooled pudding, and the custard whipped with milk on top.
