Cake with apricots – a special taste that will win you over at the first bite. It is a yogurt biscuit that I usually prepare for all fruit cakes. When you add apricots, you get a completely different cake.

And the preparation is very simple. And don't forget the vanilla sugar - it makes the cake even more special. If you like, you can add cinnamon and lemon zest. Apricot cake can be prepared in various ways, but I recommend the following.

  • 2 pieces of egg
  • 1 cup of sugar
  • 1 teaspoon of vanilla sugar
  • 1 cup yogurt
  • 0,75 cup butter (melted)
  • 2,5 cups flour
  • 1 teaspoon of baking powder
  • 700 g of cleaned apricots
  1. Beat eggs, sugar and butter until foamy.
  2. Add the rest of the ingredients, except for the apricots, and mix well.
  3. Grease a 20*30 baking sheet and sprinkle with flour or cover with baking paper.
  4. Pour the batter and arrange the pieces of apricots.

  5. Bake the cake with apricots in a heated oven at 180-200 degrees for about 30 minutes.

  6. Partially sprinkle the cooled cake with powdered sugar that you have flavored with vanilla.

  7. Serve it with coffee, tea or milk and enjoy its irresistible taste.

Notes:

  • I use a 2 dl cup for measuring.
  • Instead of butter, you can use some other fat - sunflower, olive, olive oil...
  • Cut the apricots into smaller pieces and arrange them more densely.
  • And if you don't like too much fruit in these cakes, feel free to reduce the amount of apricots.
