Cake with figs and kefir - one of the simpler cakes with fresh figs, very tasty, especially if you like figs.
- 30 pieces of fresh figs (large)
- 3 pieces of eggs
- 150 g of yellow cane sugar
- 1 dl of olive oil
- 2,5 dl kefir
- 200 g flour
- 1 bag of vanilla sugar
- 1 bag of baking powder
- Wash the figs and remove the stalks. Line a small rectangular tray with baking paper and turn on the oven to heat up to 180C degrees.
- Break the eggs into a suitable bowl and add sugar, vanilla sugar and beat with a wire.
- Add oil and beat further.
- Pour kefir into this mixture and stir to combine.
- Now add the flour and baking powder and mix everything nicely into a smooth mixture.
- Pour the batter into the prepared pan and arrange the ripe figs on top, pressing them slightly with your hand to open them.
- Place the tray in the preheated oven to bake the cake. When the cake is golden brown, check with a toothpick whether it is baked, so if the toothpick is dry, the cake is ready. Remove the cake from the oven and the baking sheet together with the paper and leave covered to cool.
- When it cools down, remove it from the paper, cut it into cubes, sprinkle with vanilla sugar and serve.
