Salčići - this wonderful delicacy is prepared mostly in winter in my area. They are demanding to make, so skill and patience are required.

This is my mom's recipe. She often prepared this recipe for us and they are really fluffy and loose. I've been making them for a long time now, and my mom likes to eat them 😀

It is necessary to prepare the fat. When the pork is butchered, separate the fat. It is then frozen overnight in the freezer. The next day, while the fat was still cold, the membrane around the fat was separated to make it easier to grind. It is cut into smaller pieces and ground in a meat grinder. Separate 350 g each, then pack them in freezer bags and use them just in time during the winter.

Sauces, ingredients:

  • 350 g of ground lard
  • 2 tablespoons flour
  • mix the flour and lard well until it is creamy and set aside.

For the dough:

  • 2 egg yolks
  • 250 ml of water
  • 2 tablespoons sour cream
  • 2 tablespoons of wine vinegar
  • 2 spoons of cumin brandy
  • about 600 g of flour

For filling and sprinkling:

  • 200 g of plum jam
  • 60 g of powdered sugar
  • 2 vanilla sugars

Salčići, preparation:

  • Beat the egg yolks in a mixing bowl, add sour cream, vinegar, water, brandy and mix. Gradually add flour and knead a soft dough that does not stick.
  • Roll the dough into a circle, as thin as possible. Divide the fat into 3 parts. Spread the developed dough with 1/3 of the fat. Then fold the top part to the middle, then the bottom part to the middle. Then fold the left side of the dough towards the middle and the right side of the dough towards the middle. Dust the resulting dough shape with flour and let it rest for 30 minutes. Repeat the procedure 2 more times.
  • For the fourth time, roll out the dough to a thickness of 1 cm, cut it into strips, then into rectangles. Fill with plum jam and fold.
  • Arrange in a pan lined with parchment paper and bake at 180 C for about 30 minutes. It is important not to open the oven while they are baking, so that they are puffy.
  • Sprinkle the hot sauce with a mixture of powdered sugar and vanilla.
  • Serve and enjoy the taste. Pleasant!
