COMPETITION FOR THE BEST VANILLA: dekine's vanilla - Danijela Žikić

Deka (on his mother's side) was a baker by profession. This is a recipe for grandma's vanilla ice cream. Very tasty, crispy and really simple!

Dekine vanilla, ingredients:

  • 300 g lard
  • 250 g of sugar
  • 1 egg
  • 2 egg yolks
  • juice of 1 lemon
  • 1 tablespoon of grated lemon peel
  • about 600 g of flour

More:

  • If necessary, plum jam
  • 200 g of powdered sugar
  • 2 vanilla sugars
  • 1 tablespoon of flour (flour is added so that the sugar sticks to the vanilla beans as well as possible)

Dekine vanilla, preparation:

  • Beat the fat and sugar until you get a creamy mixture. Add egg, yolk, lemon juice and grated lemon peel. Mix it up.
  • Gradually add flour, about 400 g. Then, transfer to the work surface, and continue mixing, while adding the rest of the flour. When a uniform dough is obtained, which does not rot, wrap the dough in transparent foil. Put it in the cold or in the refrigerator for about 3 hours, or overnight.
  • Remove the dough from the refrigerator, roll out the crust to about half a centimeter and use a mold to cut out circles.
  • Arrange in a baking tray lined with baking paper and bake at 180 C for about 10 minutes, so that they remain white.
  • Leave to cool. Then, connect two circles with plum jam. Mix powdered sugar, vanilla sugar and flour. Sprinkle the combined vanilla beans with a mixture of powdered sugar and store in a tin box with a lid.

Note: vanilla beans should stay in the box for at least 2 days. Only then can they be used. The more they stand, the tastier they are.
