COMPETITION FOR THE MOST BEAUTIFUL SLAVIC CAKE OF SERBIA - Slavic cake.

Slavski cake, ingredients:

For the dough:

  • 400 ml of water,
  • 100 ml of holy water,
  • 25 g of fresh yeast,
  • 50 ml of oil,
  • 1 teaspoon of sugar,
  • 2 teaspoons of salt,
  • 900 g of flour.

To coat before baking:

  • 1 egg yolk,
  • 1 tablespoon of milk,
  • 1 tablespoon of oil.

To coat the baked cake:

  • 1 tablespoon of oil,
  • 1 tablespoon of water.

For the decorations:

  • 40 g density,
  • 200 g of flour,
  • 1 teaspoon of salt,
  • 140 ml of water.

Celebration cake, preparation:

  • The day before preparing the celebration cake, it is necessary to make decorations and leave them to dry at room temperature.
  • The dough for the decorations is kneaded by kneading a harder dough from thickeners, flour, salt and cold water, putting it in a nylon bag and leaving it in the refrigerator to stand for an hour.
  • Then the dough is made into decorations as desired (braid, seals, bunches, leaf...).

For the dough:

  • Dissolve yeast in 200 ml of lukewarm water, add sugar, 1 tablespoon of flour, mix and let stand for 10 minutes.
  • Pour flour into a deep bowl, add salt and mix.
  • Pour in 200 ml of lukewarm water, holy water, oil and add the added yeast and knead a softer dough.
  • Cover with a clean kitchen towel and leave to rise.
  • Transfer the resulting dough to a floured work surface and divide it into 6 parts.
  • Knead each part to form a noodle.
  • Roll out one noodle to the size of a baking pan.
  • Grease the baking pan with margarine (so that the parchment paper does not move), put the parchment paper, and then put the melted dough.
  • Spread the other 5 noodles over the separated dough.
  • Cover with a clean kitchen towel and leave to rise.
  • Beat the egg yolks, oil and milk with a fork, then coat the dough.
  • Bake in a well-heated oven at 180 degrees for 60 minutes (I baked covered with aluminum foil first at 200 degrees for 30 minutes, then removed the foil and baked for another 30 minutes at 180 degrees).
  • Take the baked cake out of the oven and, with the help of the opening mechanism, remove the ring, put down the parchment paper and stick the decorations on the cake, then return it to the oven for a few minutes, but at 100 degrees so that the decorations stick (but the decorations remain white).
  • Then remove the slav cake from the oven. Bring the mixture of oil and water to a boil, then spread it over the hot Slavic cake (this way the cake will be shiny and soft).

Tip: In addition to candles, wine and boiled grain, the Slavic cake is one of the most important things that are indispensable on every Slavic table. The celebration cake must be kneaded the day before the celebration. In our region, it is customary to put basil on the Slavonic cake in the middle (it is not visible in the picture, since I took the picture before the act of cutting the cake). You can glue the decorations with a mixture of flour and water or a mixture of sugar and water. If the celebration falls on a Wednesday or Friday, the meal must be fast. We celebrate St. Đurđić. This is our main glory, so we "get drunk" at dinner and celebrate for two days. For all three days, I knead a slavish cake, as well as cakes with which they are "ploughed" (households spin the cake in a circle and break it). On the day of celebration, roast, cake, drink (if it is greasy), or fish and other fasting food are placed on the table if it is fasting, and this is all done earlier (before noon, before 12 o'clock), until the day moves forward in order to the house was progressing, and the household members were healthy. The host lights a candle, reads the Our Father, cuts the cake, which is poured with wine, into 4 places. A couple of days before the celebration, the priest must come to consecrate the water used to knead the celebration cake. Let's nurture our traditions and keep customs from being forgotten.
