My grandmother's Kosovo branch.
Kosovo Filia, ingredients:
- 1 kg of flour
- 5 pieces of eggs
- 700 ml milk
- 500-700 ml of water (depends on the thickness)
- 2 tablespoons of salt
Mixture for coating the crust:
- 500 g of cream
- 200 ml of oil
Kosovo branch, preparation:
- Beat eggs and add sifted flour, milk, water and salt. The thickness should be a little thicker than for pancakes.
- The real fillet is baked under the stove (as I did it), although it can also be done in the home version in an electric stove with only the top heater on.
- Combine cream and oil (this is for coating the crust).
- Heat a pan greased with a little oil and pour a large ladleful of the fillet mixture. Spread with a spoon.
- Heat the crust with a hot pan (1-2 min), remove the pan and coat the crust with a mixture of cream and oil.
- Return the pan again (which is always standing over the fire to be hot), keep it for 1-2 minutes, remove it and coat it with the filling mixture.
- So it goes crust-coating-crust and so on until the end.
- Then put the baked fillet on the fire covered with a lid for another 10-15 minutes.
- Cut into cubes and enjoy every bite... with cheese or yogurt, although I think it's best without anything.
Note:
Filija is an old Kosovar specialty that, with a little good will, knowledge and skill, creates a wonderful pie that is enjoyed by everyone who tries it. An old dish that is most beautiful when prepared under the sun... the taste is unique and wonderful.
