Kosovska filija - Verica Poznanović - Recipes and Cookbook online

Filija is an old Kosovar specialty, which is prepared on the hearth, under the stove. It can also be baked in the stove oven, it's just important to place the pan high, just below the heater, that's how I made it.

Kosovo Filia, ingredients:

  • 500 g of flour,
  • 700 ml of water,
  • 3 eggs,
  • a teaspoon of salt and
  • 300 g of cream.

Kosovo branch, preparation:

  • From flour, eggs, salt and water, knead the dough, a little thicker than for pancakes. Heat the oven to maximum temperature, and raise the rack to the highest position, just below the upper heaters.
  • Lubricate the pan with fat, heat it, then with a ladle, as my grandmother would say, pour the batter and distribute it evenly as for pancakes, then bake until golden brown.
  • Remove from the oven, spread with cream, then immediately cover with a new layer of dough.
  • Put it back in the oven to bake, then repeat the process, as long as there is material and dough and cream. The more thin layers of dough there are, the prettier and tastier the filling will be.
  • Cut the baked filet and serve.
