Mashed potato croquettes - if there is leftover mashed potato from yesterday's lunch, then I make croquettes.

  • 1 kg of potatoes
  • 2 pieces of eggs
  • 200 g breadcrumbs
  • salt (to taste)
  • 200 ml of oil
  • pepper (to taste)
  1. Clean the potatoes and boil them in salted water.
    Mash it with a potato masher.
  2. When it cools down a bit, add eggs, three spoons of breadcrumbs, salt, pepper and dry spices to taste.
  3. Knead to obtain a mixture that can be formed into croquettes. If necessary, add a little more breadcrumbs.

  4. Form croquettes with your hands and roll them in the rest of the breadcrumbs.
    Heat the oil in a pan and fry the croquettes.
    Arrange them on a napkin to absorb excess fat.
