Mashed potato croquettes - if there is leftover mashed potato from yesterday's lunch, then I make croquettes.
- 1 kg of potatoes
- 2 pieces of eggs
- 200 g breadcrumbs
- salt (to taste)
- 200 ml of oil
- pepper (to taste)
- Clean the potatoes and boil them in salted water.
Mash it with a potato masher. - When it cools down a bit, add eggs, three spoons of breadcrumbs, salt, pepper and dry spices to taste.
- Knead to obtain a mixture that can be formed into croquettes. If necessary, add a little more breadcrumbs.
- Form croquettes with your hands and roll them in the rest of the breadcrumbs.
Heat the oil in a pan and fry the croquettes.
Arrange them on a napkin to absorb excess fat.
