Potatoes with mozzarella - it is easy to prepare and is delicious as an appetizer, side dish or lunch.

Potatoes with mozzarella, ingredients:

  • 6 pieces of potatoes, bigger
  • 200 g of mozzarella
  • 2 pieces of eggs
  • 3 tablespoons sour cream
  • 10 g of margarine
  • salt as desired

Potatoes with mozzarella, preparation:

  • Peel and cut the potatoes into thin rings like for chips.
  • Butter a muffin tin and stack the potato rings on top of each other in each compartment to even out the height of the tin. Add salt as desired. Place in the oven and bake for 25 minutes at 200c.
  • Remove from the oven and lift the cap (the last potato on top) and place a mozzarella wheel. Put the cap back on.
  • Beat the eggs and cream and pour a spoonful of the mixture into each compartment.
  • Bake for another 20 minutes.
  • Carefully remove the baskets with a spoon so they don't fall apart and serve with ketchup.

You can add rosemary, pepper or other spices as desired.
