Cabbage buns - Javorka Filipović

  • 1 kg flour type "500"
  • 3 dl of lukewarm milk
  • 2 dl of lukewarm water
  • 2 teaspoons of sugar
  • 40 g of fresh yeast
  • 1/2 bag of baking powder
  • 2 dl oil
  • 1 teaspoon of salt
  • File:
  • 250 g of margarine for spreading
  • 3 egg yolks
  • 1 teaspoon of salt
  • as you wish:
  • 300 g of feta cheese or
  • 200 g of grated trappist or sunk (kulen, etc.)
  • Coating:
  • 2 egg whites
  • optional: sesame (cumin)
  1. Put sugar in a little warm milk and add yeast.
  2. Wait 10 minutes for it to rise nicely.
  3. Add flour and everything to the mixing bowl
  4. the rest of the ingredients and the added yeast
  5. knead a smooth dough that does not stick to your hands.
  6. You don't need to knead it a lot because it will be tough.
  7. Cover it with a cloth and let it rise for 1 hour
  8. double the amount.
  9. Prepare the filling:
  10. Beat margarine with egg yolks and add salt.
  11. Mash the cheese separately, and if you want you can
  12. also prepare grated trappist with some dry
  13. specialty/ sunka, prosciutto, kulen, etc.
  14. I prepared half with cheese and half with grated cheese
  15. trapezoid without other accessories.
  16. After 1 hour, divide the dough into 2-3 parts
  17. I divided it in two and the buns were bigger, each part
  18. separate into a rectangle with a thickness of about 3 mm.
  19. Spread half of the margarine over the entire surface of the dough
  20. and sprinkle with cheese or Trappist and sprinkle with dried meat.
  21. Roll the dough into a roll and cut with the help of saucers made of salt
  22. for coffee. The pieces are cut in a zigzag pattern from bottom to top and vice versa.
  23. The pieces are 2 cm wide.
  24. Place them on an oiled tray and leave
  25. them for ten minutes in a warm place.
  26. Do the same with the other half of the dough.
  27. Preheat the oven to 300 degrees, reduce to 200 degrees,
  28. coat the buns with beaten egg whites and sprinkle with sesame or cumin.
  29. Bake them in the oven at 200 degrees until nicely colored.
