This one light cake it is perfect for a spring atmosphere in the yard with your friends. No cooking on a hot day, it's really refreshing.

When you bring out this frozen beauty, everyone will be in awe. They will be convinced that you spent hours in the kitchen preparing it, when in fact it only took you a few minutes.

Another advantage of this cake is that you can sweeten it as desired and add your favorite fruit. You will be sure what you put in it, unlike the store-bought ones that are full of artificial flavors and emulsifiers that are harmful to your health.

ingredients:

Ice cream:
  • 400 ml of fresh raw coconut milk
  • 1/4 cup raw natural sweetener (agave, maple syrup…)
  • 1 banana
Brown crust:
  • 1/3 cup walnuts
  • 1/3 cup raw oats
  • 2/3 cup dates
  • 2 spoons of ground carob
Fruits:
  • 2 cups of either fresh or frozen fruit as desired

<strong>Preparation: </strong>

  • Prepare the cake pan. Find a bowl that can hold about 6 cups, or use a small dome-shaped cake pan and line it with foil. Alternatively you can simply make this using a normal cake tin. Arrange on the sides of a cake pan or bowl with your chosen fruit.
  • Ice cream Blend all the ingredients until the mixture becomes smooth. Then pour it into a mold or into your bowl and put it in the freezer to harden for about 3 to 4 hours.
  • You will make the brown crust by adding walnuts, oats and cocoa to a blender and pulse until they resemble flour. Add the dates and blend until the mixture starts to hold together.
  • Place on the "top" of your ice cream cake (this will become the bottom when you flip it over later). Place in the refrigerator for about an hour. Then carefully remove the cake onto a plate and remove the foil.

Decorate as desired, cut into slices, and thaw a little before eating.
