Summer pie because I didn't know what else to call her. It was made from ingredients that had been in the fridge for days. I wasn't in the mood to cook more dishes, so I decided to mix it all up and bake it in the oven.

Summer pie, ingredients:

  • 1 small eggplant, about 300g
  • 1 small zucchini, about 200g
  • 1 large bell pepper, about 150 g
  • 1 tomato, about 100 g
  • 1 cup of wheat semolina
  • 1/2 cup flour
  • 1/3 cup oil
  • 4 eggs
  • 1/2 teaspoon each of salt, pepper and oregano
  • 1 teaspoon of baking powder
  • 250 g of feta cheese
    *cup is 2dl

Summer pie, preparation:

  • Peel the eggplant and zucchini, then grate coarsely.
  • Drain them well.
  • Cut the tomato and pepper into smaller cubes.
  • Beat the eggs, cut the feta cheese into smaller cubes.
  • Combine/mix all ingredients.
  • Bake the pie in a larger pan (I used a 25*35 pan) lined with baking paper at 220 degrees for about 25 minutes.
  • If you decide to use a smaller tray, bake it longer.
