Summer salad - serve this delicious dish with homemade grissini with parmesan cheese.
Summer salad:
- 1 package of fusilli paste
- 500 g of sweet peas
- 30 ml extra virgin olive oil
- 1 pinch of salt
- hot pepper (to taste)
- 120 g of smoked chicken (or smoked turkey, cut into thin sticks)
- 150 g cherry tomatoes (cut in half)
- 100 g basil (fresh)
- 70 g parmesan cheese (grated)
- 30 g pine nuts (toasted)
Grissini with Parmesan:
- 500 g mixed bread dough
- 25 ml of olive oil
- 30 g parmesan cheese (grated)
- Summer salad: in a large pot, let the water boil, then add the fusilli paste. Cook the pasta for 4 minutes. Add the peas and cook for another 4 minutes. Rinse with cold water and transfer to a serving bowl. Add salt, pepper and olive oil. Stir. Add cherry tomatoes, basil and mix. Sprinkle Parmesan cheese and pine nuts over the salad.
- Grissini with Parmesan cheese: roll out the mixed bread dough with a rolling pin into a square shape, approximately 25 x 35 cm in size. Cut the dough into 10-12 strips. Brush each strip with olive oil and sprinkle with grated parmesan cheese. If desired, you can twist the strips a little. Arrange the strips on a tray lined with baking paper. Heat the oven to 200 degrees C and bake the breadsticks for about 12 minutes, until they are golden brown in color.
