Summer salad - serve this delicious dish with homemade grissini with parmesan cheese.

Summer salad:

  • 1 package of fusilli paste
  • 500 g of sweet peas
  • 30 ml extra virgin olive oil
  • 1 pinch of salt
  • hot pepper (to taste)
  • 120 g of smoked chicken (or smoked turkey, cut into thin sticks)
  • 150 g cherry tomatoes (cut in half)
  • 100 g basil (fresh)
  • 70 g parmesan cheese (grated)
  • 30 g pine nuts (toasted)

Grissini with Parmesan:

  • 500 g mixed bread dough
  • 25 ml of olive oil
  • 30 g parmesan cheese (grated)
  1. Summer salad: in a large pot, let the water boil, then add the fusilli paste. Cook the pasta for 4 minutes. Add the peas and cook for another 4 minutes. Rinse with cold water and transfer to a serving bowl. Add salt, pepper and olive oil. Stir. Add cherry tomatoes, basil and mix. Sprinkle Parmesan cheese and pine nuts over the salad.
  2. Grissini with Parmesan cheese: roll out the mixed bread dough with a rolling pin into a square shape, approximately 25 x 35 cm in size. Cut the dough into 10-12 strips. Brush each strip with olive oil and sprinkle with grated parmesan cheese. If desired, you can twist the strips a little. Arrange the strips on a tray lined with baking paper. Heat the oven to 200 degrees C and bake the breadsticks for about 12 minutes, until they are golden brown in color.
