Purple green beans it changes color when cooked, turning green. It was interesting to me, so I bought it. I have not prepared it until now.

If you can't find purple green beans, feel free to substitute them with whatever you have available.
Green beans prepared this way have a different taste compared to green bean stew.

In addition to the mentioned spices, you can add some others that you like. Purple green beans can be decorated/seasoned with a parsley leaf when serving. As it suits whom and as who likes.

ingredients:

  • 100 g of bacon
  • 500 g of tomatoes
  • 3 cloves of garlic
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • pepper to taste
  • 500 g of purple green beans

<strong>Preparation: </strong>

  • Clean, cut and blanch green beans until soft or steam them.
  • Finely chop the bacon and fry briefly.
  • Add tomatoes cut into smaller pieces (cleaned beforehand) and chopped garlic.
  • Simmer for ten minutes, then season.
  • Stir in green beans, cover and let rest for a few minutes before serving.
  • Green beans prepared in this way can be served with boiled rice, potatoes, mashed potatoes, polenta or something else of your choice.

I chose basmati rice.

If you are fasting or don't eat meat, feel free to leave out the bacon. Instead of bacon, use a few tablespoons of oil.
