Spicy ajvar is tasty and spicy. It is not too spicy, even children can eat it. I put an approximate preparation time. It's actually preparation throughout the day.
Hot ajvar, ingredients:
- 12 kg of red pepper
- 3 kg of blue eggplant
- 2 kg of carrots
- 250 g of sugar
- 150 g of salt
- 1 dl of wine vinegar
- 1,5 l of oil
- 12 pieces of small hot peppers
Spicy ajvar, preparation:
- Wash the wig, bake it on the stove and put it in a container with a lid to make it easier to peel. Let it stand for about 30 minutes. When it cools down, peel it, remove the seeds and leave it in a colander to drain the excess water, about 2 hours.
- Bake the eggplant on the stove, when it cools down, just squeeze out the middle. Boil the carrot in water until soft. Leave the eggplant and carrot in a colander to drain excess water.
Grind everything in a meat grinder and place in a large pot. - Add sugar, salt, vinegar and oil. Leave to heat slowly at a moderate temperature on the stove. Fry the ajvar for about 1 hour, stirring constantly.
- Then, add the ground hot pepper and continue frying the ajvar with constant stirring.
- It takes about 2 hours to fry the ajvar nicely. When the ajvar leaves a mark on the pan, it is ready.
- Wash the jars and heat them in the oven at 100 C. Pour the Ajvar into the hot jars. Place a transparent self-adhesive foil over each jar and close the jar tightly.
