Macarons my way.

  • 3 pieces of egg white (beat firmly)
  • 1 pinch of salt
  • 30 g sugar (crystal)
  • 200 g of sugar (powder)
  • 125 g almonds (finely ground)
  1. This is how I make macarons and for me this is the ideal measure.
    Firmly beat the foam of 3 egg whites with 30 grams of granulated sugar and a pinch of salt.
  2. In another bowl, mix powdered sugar and finely ground almonds.
  3. Mix everything together with firmly beaten egg whites and mix with a spatula until you get a compact mass that you can use to make halves for macarons.
  4. Take into account the length of mixing the mass, because if it is mixed for too long, then it can happen that the mass becomes too clear, so it will be difficult to make halves for macarons from them.
  5. Press them out on baking paper or a silicone mat and let them rest for about an hour.
  6. Bake them in the oven between 120-150C for about 10 minutes. You know they are ready when a ring forms around them and rises 3-5mm and the cover catches on top.
  7. When you take them out of the oven, let them rest for a while and then separate them from the paper or silicone mat.
  8. Fill them with your favorite cake filling and seal them together. Store in a closed container in the refrigerator or freezer.
