Egg, Bacon and Tomato Muffins - an exceptional breakfast that challenges you to make it almost every day!
- olive oil (for greasing)
- 6 sheets of bacon
- 8 pieces of eggs
- 1 cup cherry tomatoes (chopped)
- 2 tablespoons red onion (chopped)
- 1 pinch of black pepper (ground)
- Preheat the oven to 175 degrees C. Grease a muffin tin with olive oil.
- Fry the bacon in a frying pan, at a medium temperature, until it is half fried, about 5 minutes. Remove to a paper towel to drain. Chop into small pieces.
- In a mixing bowl, beat the eggs, then add the bacon, chopped cherry tomatoes, chopped red onion and black pepper. Mix well. Pour the mixture into the muffin tin.
- Bake the muffins in the preheated oven for 15-20 minutes, until they are done. Pleasant!
